    The Big Game is coming up this weekend. What is your favorite Game Day Appetizer? Our Chef Callie is a Chicken Wing enthusiast, here is her favorite version.

    Callie’s Favorite Chicken Wings

    20 fresh chicken wings separated into drummies and wings

    (If you buy frozen wings that’s fine just thaw and pat dry first)

    1 cup Kikkoman soy sauce

    3/4 cup honey

    1 tsp black pepper

    ½ cup pineapple juice

    2tbsp minced fresh garlic

    ¼ cup apple cider vinegar

    3 tbsp Tabasco pepper sauce (or your favorite Hot Sauce)

    3 tbsp softened butter

    You can prepare these wings roasted or fried, I prefer fried of course, but for the sake of making messes for the home cook, we shall roast.

    Place first five ingredients in mixing bowl and whisk together

    Place Chicken wings in shallow dish and cover with the marinade

    For best results let sit in marinade for at least two hours or up to overnight

    After marinating remove the wings and place on wire rack over baking sheet and roast slow for about an hour in a preheated 325 degree oven

    Frequently basting with marinade

    When the wings are almost done put the remaining marinade on the stove in a sauce pan and reduce until it glazes a spoon

    Whisk into the sauce the butter and the Tabasco

    Place wings and one cup of sauce into mixing bowl and toss. Serve Immediately.

    Blue Cheese Dipping Sauce

    1 cup Mayo

    1 cup Sour Cream

    3 tbsp sliced Green onion

    1 tsp black pepper

    1 cup Blue Cheese crumbles

    1 tbsp lemon juice

    Puree ingredients in food Processor. Or, if you like chunky blue cheese dressing just whisk together ingredients in mixing bowl.

    The party began with appetizers including Asparagus Goat Cheese Parcels and Shrimp and Cucumber Spring Rolls. For the main course Callie made Asian Salad, Grilled Vegetable Kabobs, Roasted Duck Pasta, Soy and Dijon Glazed Salmon, and Israeli Couscous Pilaf. Breads and Rolls, Tea and Water, completed the menu.
